Every Monday morning, I feel the same feeling. Guilt –
Did I do enough this weekend with the kids? Did I make the most of our family time? Did I get enough done around the house? Should I have organised to see my friends? I shouldn’t have spent Friday night lazing on the couch.
I decided this very Monday morning to stop beating myself up about what I did or didn’t do over the weekend and do something to cheer myself up. That something, is baking of course! I put the smallest baby to bed & when I announced to the 3 year old that we were going to bake cookies, the delight on her face made me think, “why don’t we bake together more often?”
There always seems something ‘more important’ to do. Washing, answering messages/emails, tidying, planning the week, there is a never ending list! It’s hard sometimes to make time for the fun things in life & let the jobs take over. Now, I don’t mean I’m no longer going to do the washing or I’m going to leave my house to become an overflowing dump (something that can happen very quickly when you have kids), I just mean that sometimes, those things can wait, just for an hour, whilst you make cookies. I’m just about to bite into a warm chocolate oatie cookie. I thought I’d better check that they are edible before I share the recipe with…mmm, you. Hang on, these are…mmm, yep, really good!
I have attached the picture of the recipe I used (from a random cookies book that I’ve accumulated over the years), and here are the changes I made…
I added more milk. I would actually say the recipe is fat too dry. I added about an extra tablespoon of milk but it could have done with another couple. This will help the mixture go a bit further too as the recipe says it makes 20 cookies but we only just got 18, at a push.
I added Valencian orange extract to the recipe to make them orange chocolate, something you MUST do! It made them extra delicious. I added a teaspoon of the extract.
The recipe says use a spoon to mix everything together but I had to use the kitchen aid mixer due to the mixture being quite hard, hopefully adding more milk would help with this.
A little tip – When your flattening the cookies down with a fork, Dip the fork in hot water first to stop it sticking to the sticky mixture whilst you do this.
The cookies came out misshapen but delicious. We now have 18, (well actually 17) cookies to get through…Shouldn’t be a problem!
